Apple Cider Glazed Pork Meatballs
Yield: 6 servings
Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes
Ingredients:
For the Meatballs:
1 pound ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, grated
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground sage
For the Apple Cider Glaze:
1 cup apple cider
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground pork, breadcrumbs, milk, grated onion, egg, salt, black pepper, and sage. Mix until well combined.
Shape the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 20 minutes, or until the meatballs are cooked through.
While the meatballs are baking, prepare the glaze. In a small saucepan over medium heat, combine the apple cider, brown sugar, apple cider vinegar, and Dijon mustard. Bring to a boil, then reduce the heat and simmer until the glaze has reduced by half and thickened.
Once the meatballs are done, remove them from the oven and brush them generously with the apple cider glaze.
Return the meatballs to the oven and bake for an additional 5 minutes, until the glaze is sticky and slightly caramelized.
Serve the meatballs warm, drizzled with any remaining glaze. Enjoy!
