Moroccan Spiced Chicken with Fig and Olive Relish

Ingredients:
For the Moroccan Spiced Chicken:
4 chicken thighs, bone-in, skin-on
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
Salt and black pepper to taste
For the Fig and Olive Relish:
1 cup dried figs, chopped
1 cup green olives, pitted and chopped
1/2 cup red onion, finely chopped
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons fresh mint, chopped
Salt and black pepper to taste
Instructions:
Preheat your oven to 400°F (200°C).
In a small bowl, mix together the cumin, coriander, turmeric, cinnamon, salt, and black pepper.
Rub the chicken thighs with olive oil, then sprinkle the spice mix evenly over the chicken.
Place the chicken thighs on a baking tray and bake for 30-40 minutes, or until the chicken is cooked through and the skin is crispy.
While the chicken is cooking, prepare the relish. In a bowl, combine the chopped figs, olives, red onion, honey, apple cider vinegar, and mint. Season with salt and black pepper.
