Peppermint Mocha Shortbread Xmas Cookies

Ingredients:
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 tsp pure vanilla extract
1 tsp peppermint extract
2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 tbsp instant coffee granules
1/4 tsp salt
Optional: white chocolate, melted, for drizzling
Optional: crushed candy canes, for sprinkling
Instructions:
In a large mixing bowl, cream together the softened butter, granulated sugar, vanilla extract, and peppermint extract until light and fluffy.
In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, instant coffee granules, and salt.
Gradually add the flour mixture to the butter mixture, mixing until well combined.
Divide the dough in half and shape each portion into a flattened disc. Wrap each disc in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm.
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
On a lightly floured surface, roll out one disc of dough to a 1/4-inch thickness. Using a snowflake-shaped cookie cutter, cut out cookies and carefully transfer them to the prepared baking sheets.
Bake the cookies for 12-15 minutes, or until the edges are set. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Optional: Once the cookies have cooled, drizzle them with melted white chocolate and sprinkle with crushed candy canes for an added touch of festive charm.
