Homemade Spicy Mushroom XO Sauce

Ingredients:

  • 1 oz dried shiitake mushrooms, finely chopped

  • 1 oz dried wood ear mushrooms, finely chopped

  • 1 oz dried shrimp, finely chopped

  • 3 cloves garlic, minced

  • 2 shallots, minced

  • 2 tbsp dried red chili flakes

  • 1/4 cup vegetable oil

  • 1/4 cup oyster sauce

  • 2 tbsp soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • Optional: 1 tbsp grated fresh ginger

Instructions:

  1. Soak the dried shiitake and wood ear mushrooms in warm water for 15-20 minutes, or until softened. Drain and finely chop them. Set aside.

  2. Heat the vegetable oil in a medium saucepan over medium heat. Add the minced garlic, shallots, and optional grated ginger, and cook for 3-4 minutes, or until fragrant and lightly golden.

  3. Add the chopped mushrooms and dried shrimp to the saucepan. Cook for 5-7 minutes, stirring frequently, until the mixture is well combined and fragrant.

  4. Stir in the dried red chili flakes, oyster sauce, soy sauce, brown sugar, and rice vinegar. Bring the mixture to a gentle simmer, then reduce the heat to low and cook for 15 minutes, stirring occasionally to prevent sticking.

  5. Remove the saucepan from the heat and stir in the sesame oil. Allow the sauce to cool to room temperature.

  6. Transfer the homemade spicy mushroom XO sauce to an airtight container and store it in the refrigerator for up to 2 weeks. Use it as a condiment or to enhance the flavor of your favorite Asian dishes.
